Sully's Sausage Soup
Sully'S Sausage Soup is an moderately easy dinner. Made with 2 medium zucchini, thinly sliced, 1 large (32 oz.) can peeled tomatoes, 1 lb. sweet sausage, 2 cans beef broth and 1 c. water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown onion and sausage in soup pan, then slice sausage into thin pieces.
Add remaining ingredients; bring to boil.
(Crush tomatoes with spoon.)
Reduce heat to simmer; cook until zucchini is tender.
Serve hot with cheese sprinkled over top.
For healthier soup, cool and skim fat off top.
Freeze what isn't used.
Serves 4 to 6.
