Sugar-Free Carrot Salad
Sugar-Free Carrot Salad is an easy dinner. Made with 1 (3 oz.) pkg. orange sugar-free jell-o gelatin, 1 c. boiling water, 1 (8 oz.) can crushed pineapple, drained, 1 tbsp. lemon juice and 3/4 c. finely shredded carrots (fresh), this recipe delivers authentic, satisfying flavors. In a bowl, dissolve gelatin in boiling water.
Drain pineapple, reserving juice.
Add lemon juice and enough cold water to the pineapple juice to make 1 cup liquid.
Stir liquid into dissolved gelatin.
Chill until slightly set.
Stir in pineapple and carrots.
Pour into oiled 4-cup mold or round glass dish; cover and chill until firm.
