Roasted Pepper Pasta
Roasted Pepper Pasta is an moderately easy dinner. Made with 1 pkg. penne noodles, 1 red pepper, 1 yellow pepper, 2 green peppers and olive oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook noodles as directed.
Slice peppers in 1/2 and hollow out inside.
Place hollow side down on a cookie sheet.
Wipe olive oil on the outside of peppers and sprinkle with kosher salt.
Broil until peppers turn black (approximately 15 minutes).
Wipe skin off with a paper towel and thinly slice.
In a pan, add diced onion, diced tomatoes, garlic and fennel seed.
Add peppers and toss with cooked pasta and fresh basil.
Serve with Parmesan cheese.
