Rice Pudding
Rice Pudding is an moderately easy dinner. Made with 1/2 c. minute rice, 1/2 c. water, 3 eggs, 1 c. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Bring rice and water to a boil.
Cover and let set for 30 minutes.
Beat eggs until foamy.
Add sugar, salt, butter and vanilla.
Mix well.
Add milk and stir.
Pour rice in 1 3/4-quart greased casserole.
Pour the custard (liquid) over the rice.
Do not stir.
Sprinkle with nutmeg.
Bake about 1 1/4 hours (350Β°) in a pan of hot water.
Pudding is done when inserted knife comes out clean.
Serve with Cool Whip on top.
