Potato-Cheese Soup
Potato-Cheese Soup is an moderately easy dinner. Made with 4 c. sliced potatoes, 2 c. water, 2 tsp. salt, 1 small onion and 1 tbsp. oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook the potatoes in salted water until tender.
Reserve cooking water.
Saute onion in oil.
Put potatoes, water, onion and seasonings in blender and purΓ©e in several batches.
Return to large pot and add warm milk.
Stir continuously, add the cheese, margarine and seasonings.
Heat just until cheese melts, do not boil.
Makes 3 quarts.
