Our Favorite Bean Soup is an moderately easy dinner. Made with 1 lb. pinto beans, ham bone or ham piece, 1 can tomatoes, juice of lemon and 2 tbsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Wash beans.
Place in large kettle.
Cover with water 2 inches.
Add 2 tablespoons salt.
Soak overnight; drain in the morning.
Add 2 quarts of water and ham bone or ham piece.
Bring to boil.
Cover and simmer for 3 hours.
Add 1 large chopped onion and 1 can of tomatoes.
Season with chili powder, juice of lemon, salt and pepper.
Take out bone.
Cut up meat and return pieces to soup.
Simmer 1 hour or more.
Good with tossed salad and crackers.
