Old-Fashioned Michigan Bean Soup
Old-Fashioned Michigan Bean Soup is an moderately easy dinner. Made with 1 lb. navy beans, 8 c. water, 1 1/4 lb. smoked ham hock or meaty ham bone, 1 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash beans thoroughly. Cover with water. Bring to a boil. Boil for 2 minutes. Cover. Remove from heat.
Let stand 1 hour. Add ham, salt and pepper.
Heat to boiling.
Reduce heat, cover and simmer 2 1/2 hours.
Remove ham bone and cut off meat.
Add onion, meat and tomatoes.
Cover and simmer 1 hour longer. Stir in milk.
Heat a few minutes more and serve.
