Oatmeal Muffins
Oatmeal Muffins is an moderately easy dinner. Made with 1 c. rolled oats, 1 c. buttermilk or sour milk, 1/3 c. soft shortening (part butter), 1/2 c. brown sugar and 1 egg, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Soak first 2 ingredients together for 1 hour.
Mix shortening, brown sugar and egg together thoroughly.
Sift flour, baking powder, soda and salt together.
Stir in alternately oat mixture and shortening mixture.
Mix well together.
Fill greased muffin cups 2/3 full.
Bake until golden brown at 400Β° for 20 to 25 minutes.
Makes 12 individual muffins.
