New England Clam Chowder
New England Clam Chowder is an moderately easy dinner. Made with 2 cans clams, drained, 2 c. clam juice, 8 oz. bacon, diced, 2 tbsp. butter and 2 onions, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook bacon until crisp.
Remove bacon.
Add butter and onions. Saute 10 minutes.
Add flour; cook 5 minutes more.
Add clam juice, potatoes, thyme and pepper; simmer 15 minutes.
Add clams. Add milk and cream; stir well over low heat.
Do not boil or soup will curdle.
Add parsley and serve!
Makes 10 servings.
