Mushroom Soup
Mushroom Soup is an moderately easy dinner. Made with 1 qt. mushrooms, 1 1/2 qt. good, rich stock, veal or chicken, 1 tbsp. flour, 1 tbsp. butter and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash and peel 1 quart mushrooms; cut into dice.
Stir into them 1 1/2 quarts of good rich stock, veal or chicken.
Thicken with 1 tablespoon flour creamed with 1 tablespoon butter and 1 teaspoon salt and 1/2 teaspoon of pepper.
At last moment, add a bit of whipped cream and croutons.
