Mexican Barbecue Gator
Mexican Barbecue Gator is an moderately easy dinner. Made with 1 qt. gator meat, presoaked and diced small, 1/2 c. cooking oil, salt and pepper to taste, 1 onion, chopped and 1 green scallion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Salt and pepper meat.
Work oil into meat and fry in hot skillet until done.
Drain off oil; add onion, scallion, garlic and saute until vegetables have cooked down, then add tomatoes. Cook until all liquid has evaporated and sauce has formed.
Serve on buns or on flour tortillas.
