Manhattan Clam Chowder
Manhattan Clam Chowder is an moderately easy dinner. Made with 1 medium onion, chopped, 2 tbsp. butter, 6 potatoes, cubed, 2 cans clams (with juice), minced or chopped and 1 can tomato soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onions in butter until transparent, not brown.
Add cubed/washed potatoes in cooked onions.
Cover with water only to top of potatoes.
Cover and cook on medium heat until potatoes are soft (keep checking).
Add cans of clams (minced or chopped) with the juice to the potato/onion mixture.
Now add tomato soup, salt and pepper; stir again and heat through until hot.
