Low-Fat Pork Lo Mein
Low-Fat Pork Lo Mein is an moderately easy dinner. Made with 1/2 c. mushrooms, chopped, 1/2 lb. lean pork loin, 1 head nappa cabbage, 2 to 3 whole scallions and 2 tbsp. canola oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice pork thinly and shred into match-stick sized strips. Shred cabbage.
Cut scallions into 1-inch sections.
Heat oil until very hot in wok or heavy skillet.
Add salt; then scallions. Stir-fry 45 seconds.
Add pork.
Stir-fry 2 to 3 minutes.
Add cabbage and mushrooms.
Stir-fry 2 minutes.
Add spaghetti and soy sauce.
Toss with rest of mixture.
Cover and cook 5 minutes over medium heat.
Serves 6 to 8. Contains 340 calories and 7 grams fat per serving.
