Linguine With Vegetables And Provolone is an impressive dinner. Made with 1/2 lb. linguine or angel hair pasta, 2 tbsp. butter or margarine, 1 garlic clove, minced, 2 green onions, chopped and 2 small zucchini, thinly sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a 3-quart saucepan, bring salted water to a boil. Add pasta.
Cook 11 minutes.
Drain and return pasta to saucepan. Melt butter in large skillet over medium heat.
Add garlic, green onions, zucchini and mushrooms.
Saute 2 minutes.
Add tomatoes, basil, salt and pepper.
Simmer 3 to 4 minutes. Add vegetables and cheese to pasta.
Gently sprinkle with parsley.
