Lentil Soup
Lentil Soup is an impressive dinner. Made with 2 c. lentils, 8 c. water, 1/2 c. chopped onion, 2 cloves minced garlic and 1/2 c. chopped carrots, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soak lentils overnight in 2 cups water.
Saute onion, garlic, celery and carrots in oil.
Add drained lentils, 6 cups of water, salt, pepper, tomato paste, bay leaves and oregano.
Bring to a boil.
Cook until lentils are soft.
Remove bay leaves.
Add vinegar.
