Lemon-Cheese Tarts
Lemon-Cheese Tarts is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 1/2 c. freshly squeezed lemon juice, 2 tsp. grated lemon rind and 1 (8 oz.) pkg. cream cheese, softened, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Beat eggs in top of double boiler until thick and fluffy. Continue beating while gradually adding sugar, lemon juice and rind.
Place over hot water and cook, stirring constantly, until custard is thick and smooth.
Cool slightly.
Gradually blend custard into cream cheese and when smooth, fill tart shells. Makes 6 servings.
