Jim's Crab Bisque
Jim'S Crab Bisque is an moderately easy dinner. Made with 1/3 c. butter, 1/4 c. flour, 2 1/2 c. milk, 1/2 c. whipping cream and 1/2 lb. lump white crabmeat, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In a heavy skillet, melt butter; stir in flour.
Stir constantly while cooking on very low heat (cook about 2 minutes); don't brown.
Gradually add milk, stirring until smooth.
Add remaining ingredients (all except crabmeat) and cook 3 to 4 minutes on low heat, until thickened (consistency should be that of potato soup).
Add crabmeat and simmer 5 minutes.
Garnish each serving with a parsley sprig.
Yields 4 cups.
