Cook vegetables in microwave or skillet sprayed with vegetable spray until tender.
Add cheese to egg substitute.
Add seasonings; mix well.
Place pie crust in glass pie plate; spread mustard on bottom of crust.
Add vegetables.
Pour cheese and egg mixture over top.
Bake at 375Β° for 18 to 20 minutes or until knife inserted in center comes out clean.
