Fried Rice
Fried Rice is an moderately easy dinner. Made with 3 c. cooked, cool rice, 6 chopped green onions, 1 c. cooked chicken, beef, shrimp, etc., 6 slices bacon and 3 or 4 eggs, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry bacon until crisp in large skillet; drain, reserving 2 tablespoons fat.
Cool and crumble bacon.
Get skillet hot; pour in beaten eggs and stir in rice, onions, meat and vegetables. Cook until eggs are cooked, then cover and steam until vegetables are tender.
Stir in bacon; add soy sauce until dark.
Cook 5 more minutes and serve.
We like it served on a bed of fresh lettuce.
