Fried Green Tomatoes
Fried Green Tomatoes is an easy dinner. Made with 1 c. cornmeal, 1/2 c. all-purpose flour, 2 lb. (4 to 5) tomatoes (green), sliced 1/2-inch thick, salt and pepper to taste and oil or shortening (for frying), this recipe delivers authentic, satisfying flavors. In a shallow bowl, mix cornmeal and flour.
Dredge both sides of tomato in the mixture, pressing the slices firmly into the mixture for a good coating.
Put enough oil or shortening in an iron skillet to come to a depth of about 1/4-inch and heat over medium-high heat.
Add tomatoes to the hot oil a few at a time without crowding.
Fry about 2 minutes or until golden brown. Turn and cook other side.
Drain on paper towels.
Salt and pepper to taste.
Serve hot.
