Fresh Salsa
Fresh Salsa is an moderately easy dinner. Made with 1 fresh green chili (may substitute 1 small can chopped chilies), 2 fresh ripe tomatoes, chopped, 2 cloves garlic, minced, 4 green onions (tops and bulbs), chopped and 1/2 tsp. fresh or dried cilantro, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350°.
If using fresh chili, wash green chili but do not cut it.
Place whole chili on baking sheet and roast for about 15 minutes or until chili begins to soften.
Remove from oven, cool and slice the chili.
Discard the seeds.
Combine all the ingredients in a food processor or blender.
Process or blend just until all ingredients are finely chopped.
Do not purée. Chill and serve.
