Pare potatoes; cut into thick strips (the thicker the strips, the less oil they need to brown).
Cover the potatoes with cold water; let stand 1 hour.
Drain and blot dry.
Spread the potatoes in a nonstick jelly-roll pan; sprinkle with oil.
Shake the pan. Bake in very hot oven (450Β°) for 40 minutes or until potatoes are brown and tender.
Turn the strips several times during baking. Sprinkle with salt and paprika.
Makes 8 servings at 100 calories each.
