Erwtensoep (Dutch Pea Soup)
Erwtensoep (Dutch Pea Soup) is an moderately easy dinner. Made with 2 c. split peas, 1 c. whole peas, 10 c. water, 3 onions and 1 large ham hock, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Soak both types of peas overnight in just enough water to cover.
Next day, drain the peas, then place them in the 10 cups of water in a large pot with all of the other ingredients, except the sausage.
Bring to a boil, turn down heat and simmer for 1 1/2 hours, stirring often.
If soup becomes too thick, thin by gradually adding small amounts of water.
Remove ham hock.
Salt and pepper to taste.
Add smoked sausage and continue simmering for 15 minutes.
