Enchilada Casserole
Enchilada Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 9 corn tortillas, cut in half, 1 small box velveeta cheese, sliced, 1 can ro-tel tomatoes and 1 can ranch style beans, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat; drain.
Place 3 tortillas in bottom of buttered casserole dish.
Spread half of meat on top and layer with 1/2 can beans, then 1/2 of sliced cheese.
Add another layer of tortillas and repeat layers.
Place remaining 3 tortillas on top.
Mix cream of chicken soup and Ro-Tel tomatoes together.
Pour over top of tortillas.
Cover and bake 1 hour in 350Β° oven.
