Curry Rice
Curry Rice is an moderately easy Indian dinner you can prepare in about 1 hour 30 minutes. Made with pork chops, trimmed and cubed, large onion, chopped, large carrots, sliced, large potatoes, sliced and large green pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In large pan, simmer pork chop cubes in salted water (enough to cover) 45 to 60 minutes.
Add more hot water; enough to make as much curry as you want; then put in onions, carrots and potatoes. Salt and pepper to taste.
Bring to boil, lower heat and simmer 2 hours, stirring occasionally, covered.
Add the green pepper and simmer another 15 minutes.
Add flour to water to make sauce for thickening.
Stir into vegetables.
Add curry powder.
Serve over regular cooked rice, not instant.
Leftovers freeze nicely.
