Cranberry Roast Pork
Cranberry Roast Pork is an moderately easy dinner. Made with 4 lb. boneless pork roast, tied with string, salt and pepper to taste, 3/4 c. fresh orange juice, 1/4 tsp. cinnamon and 1/4 tsp. ginger, this recipe delivers authentic, satisfying flavors. Preheat oven to 325°.
Rub roast with salt and pepper.
Place on rack in a broiler pan.
Bake for 2 hours and 30 minutes to 3 hours or until meat thermometer reaches 175°.
In a saucepan, combine the remaining ingredients and bring to a boil.
Remove the sauce from heat.
About halfway through the baking process, begin to baste the roast with the cranberry mixture.
Repeat every 15 minutes until roast is done.
Serve remaining sauce with sliced roast.
