Cinnamon Roasted Sweet Potatoes
Cinnamon Roasted Sweet Potatoes is an easy dinner. Made with 2 tbsp. honey, 2 tbsp. grapeseed or canola oil, 6 small sweet potatoes, scrubbed and halved, 6 cinnamon sticks and salt and freshly ground pepper to taste, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Preheat oven to 375 degrees.
In small bowl, whisk together honey and oil.
Rub each sweet potato halve with honey and oil mixture.
Season potatoes with salt and pepper.
Press a cinnamon stick between matching halves of each sweet potato and wrap potatoes in foil.
Place on a baking sheet and roast for 30 min. Remove foil from potatoes and arrange skin side up on baking sheet.
Place cinnamon sticks next to potatoes and return to oven. Bake until potatoes and cinnamon sticks brown lightly; about 30 min.
Transfer to serving platter.
