Christmas Gingersnaps

Sift flour, measure 7 cups and sift with soda, salt and spices.
Sift 1/2 cup flour and set aside to use only if needed. Measure sugar, butter and molasses.
Turn molasses into small pan and warm slightly; add brown sugar and stir until melted.
Add butter, blending in well.
Stir in eggs, one at a time.
Batter is smooth.
Add orange peel.
Stir in dry ingredients.
Gradually add sufficient flour to make a soft dough that can be kneaded.
Knead until smooth.
Keep tightly covered and refrigerate overnight. Roll out and cut in desired shapes.
Bake at 375Β° for 10 to 12 minutes.
