Chocolate Chip Muffins
Chocolate Chip Muffins is an moderately easy dinner. Made with 2 c. pastry flour or 1 7/8 c. all-purpose flour, 3 tsp. baking powder, 1/2 tsp. salt, 2 tbsp. sugar or up to 1/2 c. and 1 or 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift together first 4 ingredients.
Mix in another bowl, eggs, milk and melted butter.
Pour milk mixture over the flour mixture. Stir only enough to dampen the flour.
The batter should have lumps.
Add chocolate chips; fold in gently.
Spoon into buttered or nonstick sprayed or paper lined muffin tins.
Bake at 400Β° for about 15 minutes.
Makes 10 large muffins or 12 medium.
