Chimichangas
Chimichangas is an moderately easy dinner. Made with 2 cans roast beef with gravy or leftovers from roast, 1 1/2 lb. ground beef, 1 large onion, chopped, 2 (4 oz.) cans diced green chilies and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute onion and garlic in oil.
Add ground beef and cook until no longer pink.
Mix roast beef in first mixture.
Add flour, salt and cumin; stir and cook 1 minute.
Add chilies and cheese.
Heat tortillas in microwave (just until soft).
Spread filling over tortillas and roll like a burrito.
Deep fry in oil until brown and crisp.
Serve with salsa, lettuce, avocado and/or sour cream.
