Chili Stuffed Potatoes
Chili Stuffed Potatoes is an moderately easy dinner. Made with 4 medium baking potatoes, 1/2 lb. ground beef, 1 (17 oz.) can del monte whole kernel golden sweet corn, drained, 1/2 c. del monte ketchup and 1/2 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Pierce potatoes; microwave on High 16 minutes or until soft, rotating halfway through. In large skillet brown meat; drain. Stir in tomatoes, ketchup, pepper and chili powder. Cover and simmer 10 minutes.
Slit potatoes.
Spoon 1 cup meat mixture each potato.
Garnish with sour cream, grated cheese and green onions, if desired.
Makes 4 servings. Total time
