Chili Rellenos Casserole
Chili Rellenos Casserole is an moderately easy dinner. Made with 2 to 3 (4 oz.) cans green chilies, 1 lb. cheddar cheese, grated, 1 lb. monterey jack cheese, grated, 4 eggs, separated and 1 (13 oz.) can evaporated milk, this recipe delivers authentic, satisfying flavors. Remove seeds, rinse and flatten chilies.
Put half in a 9 x 13-inch pan.
Cover with Cheddar cheese, then remaining chilies and Jack cheese.
Beat egg yolks with milk, flour, salt and pepper. Beat egg whites until stiff and fold in yolk mixture.
Pour egg mixture over casserole.
Bake at 325Β° for 45 minutes to 1 hour until lightly browned.
