Chicken Pot Pie
Chicken Pot Pie is an moderately easy dinner. Made with 1 fat hen, 1 pimentos, 2 eggs, pie crust and 1 c. celery, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook fat hen and dice meat.
Saute celery, pimentos and onion in a small amount of butter.
Make chicken gravy very thick from stock, thicken with cornstarch or flour.
Cut up 2 hard-boiled eggs into gravy.
Add sauteed vegetables, 2 cans of mixed peas and carrots and the diced chicken.
Pour into long baking dish and cover with pie crust.
(Bottom crust is optional.)
Bake in moderate oven (350Β°) until brown, about 45 minutes.
