Chicken-Pepper-Steak
Chicken-Pepper-Steak is an moderately easy dinner. Made with 1 lb. boneless chicken breasts, 1/4 c. soy sauce, 1 clove garlic, 1/2 tsp. ginger and 1/4 c. salad oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

With a very sharp knife, cut chicken breasts in strips 1/8 inch thick.
Combine soy sauce, ginger and garlic; set aside. Heat oil in a large frying pan or wok.
Add chicken.
Cook until tender.
Add soy sauce, garlic and ginger; let simmer about 15 minutes.
Add vegetables; toss until vegetables are tender-crisp. Mix cornstarch with water; add to pan.
Stir and cook until thickened.
Add tomatoes and heat through.
Serve with fluffy rice.
