Chicken and Wild Rice Soup
Chicken And Wild Rice Soup is an impressive dinner. Made with 1 (6 oz.) box long grain rice and wild rice mix, 1 1/2 to 2 c. diced onion (1 large onion), 2 to 3 cloves garlic, minced, 2 c. sliced mushrooms and 2 boneless, skinless chicken breast halves, diced, this recipe delivers authentic, satisfying flavors. Prepare rice mix according to package directions (omit butter).
Saute onion, garlic, mushrooms and chicken in oil, 5 to 8 minutes.
Reserve 1/2 cup of broth and add cornstarch; set aside.
Add cooked rice, broth and spices to onion mixture.
Bring to boil over medium-high heat.
Add cornstarch mixture and white wine to soup.
Stir until thickened.
Makes about 11 cups.
