Cheese Soup(Serves 6 To 12) is an impressive dinner. Made with 1/2 stick margarine (1/4 c.), 3 green onions (scallions), chopped, 3 stalks celery, chopped, 3 carrots, grated and 2 (10 1/2 oz.) cans chicken broth, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Melt the margarine and saute the onions, celery and carrot until veggies are limp.
Add the chicken broth.
Cover and simmer 30 minutes.
Add the potato soup, Cheddar cheese, parsley, Tabasco sauce and salt and pepper.
Stir in sour cream.
Simmer 15 minutes. Do not boil.
Add sherry.
