Cauliflower Soup
Cauliflower Soup is an moderately easy dinner. Made with 1 small head cauliflower, 2 or 3 carrots, sliced, 1 onion, chopped, 2 tbsp. bacon drippings and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Rinse cauliflower and place in bowl.
Cover and micro-cook on High for 3 minutes.
Turn cauliflower over and cook an additional 4 1/2 minutes on High.
Dice and set aside.
Micro-cook carrots and onion on High for 3 to 4 minutes, until tender.
Add cauliflower. Melt bacon drippings in Dutch oven.
Add flour and brown slightly. Gradually add milk, stirring constantly.
Add vegetables; heat thoroughly and season to taste.
