Canadian Cheese Soup
Canadian Cheese Soup is an moderately easy dinner. Made with 3 tbsp. grated, pared carrot, 3 tbsp. butter, 3 tbsp. grated onion, 4 c. chicken broth and 1/2 tsp. dry mustard, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute carrot and onion in butter until soft.
Add chicken broth, mustard and paprika.
Continue to cook over low heat for about 15 minutes.
Mix cornstarch with milk and add to soup. Remove from heat and cool for about 5 minutes.
Add cheese and beer and return to heat.
Stir over low heat until cheese melts.
Serve with a sprinkling of parsley.
Makes 6 servings.
