Blueberry Muffins
Blueberry Muffins is an moderately easy dinner. Made with 1 egg, 1/4 c. salad oil or melted shortening, 2 tsp. baking powder, 1/2 c. milk and 1 1/2 c. sifted flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat egg slightly with a fork.
Stir in milk and salad oil or shortening.
Stir together flour, sugar, baking powder and salt. Mix together, stirring just until flour is blended.
Do not overmix.
Fold in 1 cup fresh or frozen blueberries.
Fill greased muffin cups 2/3 full.
