Black Bean Chili
Black Bean Chili is an moderately easy dinner. Made with 1 medium onion, diced, 1 red pepper, stemmed, seeded and diced, 2 tbsp. chili rojo oil or olive oil, 1 1/2 tsp. ground cumin, toasted and 2 jalapeños, stemmed, seeded and diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute the onion, red pepper, chili oil and cumin over medium heat for about 5 minutes.
Add the jalapeños and garlic and cook another minute.
Add the tomatoes, oregano and salt and cook over medium-low heat for about 20 minutes.
Add the black beans and cook for another 20 to 30 minutes, stirring occasionally.
(Add a little water if necessary.)
Add the cilantro and cook 5 minutes longer.
Season to taste with lime juice and salt.
Serve hot.
