Applesauce Rhubarb Muffins
Applesauce Rhubarb Muffins is an moderately easy dinner. Made with 2 c. flour, 1 c. whole wheat flour, 2 tsp. baking powder, 2 tsp. cinnamon and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Stir flours, baking powder, cinnamon, baking soda and salt together.
Make well in center and set aside.
In medium bowl, beat eggs and stir in brown sugar, applesauce and oil.
Add egg mixture to well in flour mixture.
Stir until moistened.
Fold in rhubarb. Fill 2/3 full in muffin pan.
Bake at 400Β° for 18 to 20 minutes.
