Zesty Black Bean Soup
Zesty Black Bean Soup is an moderately easy dinner. Made with 4 slices bacon, 1 large onion, 1 garlic clove, minced, 2 (15 oz.) can black beans, drained and 14 oz. can beef broth, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook bacon in 3-quart saucepan until crisp.
Remove to paper towels.
Add onion and garlic to drippings; cook and stir 3 minutes.
Add beans, broth, water, picante sauce, salt and oregano.
Cover and simmer 20 minutes.
Spoon into bowls.
Dollop with sour cream, if desired.
Sprinkle with reserved crumbled bacon.
Serve with extra picante sauce.
