Will's Chili Verde
Will'S Chili Verde is an moderately easy dinner. Made with 1 1/2 c. canned or frozen anaheim chilies (fresh chilies must be roasted and peeled, no seeds), 1 1/2 lb. pork, such a s butt steak or end cut chops, 1 medium onion, 1 tsp. cumin and pinch of red pepper seed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat the oil on medium-high and sear pork on all sides and reduce to simmer.
Cook for approximately 1 hour, adding water as needed until tender.
Add chilies, onion and cumin and simmer an additional 30 minutes.
Mix cornstarch, flour and cold water together and add to chili.
Use red chili seed to add heat to taste and simmer to preferred texture.
