Wild Rice Salad
Wild Rice Salad is an moderately easy dinner. Made with 1 c. uncooked wild rice, 2 c. diced cooked chicken, 1 to 1 1/2 c. halved green grapes, 1 c. sliced water chestnuts, drained and 3/4 c. light mayonnaise, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook rice according to package directions.
Drain well.
Cool to room temperature.
In a large bowl, combine chicken, grapes, water chestnuts and mayonnaise.
Toss gently and chill.
Just before serving, add cashews, if desired.
Serve on lettuce leaves. Serves 6.
