Vermicelli Soup
Vermicelli Soup is an moderately easy dinner. Made with 2 garlic cloves, peeled, 1/2 bunch green onions, white part only, 1 tbsp. vegetable oil, 2 1/2 oz. vermicelli, broken and 3 c. chicken stock, defatted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop garlic and onion.
Heat the oil in a 2-quart saucepan and lightly brown vermicelli.
Watch carefully and stir constantly to prevent burning.
Add garlic and onion.
Saute for several minutes.
Add tomatoes, stock, chiles and pimiento.
Simmer about 8 minutes or until most of the liquid is absorbed.
Serve hot. Makes 10 (1/2 cup) servings.
