Vegetarian Split Pea Soup
Vegetarian Split Pea Soup is an impressive soup you can prepare in about 1 hour 12 minutes. Made with c. vegetable broth, c. dried split peas, rinsed, medium onion, chopped, c. carrots, chopped and celery ribs, chopped, this recipe delivers authentic, satisfying flavors. In large saucepan, combine first nine ingredients; bring to boil.
Reduce heat; cover, and simmer for one hour or until peas are tender, stirring occasionally.
Add salt and pepper.
Simmer 10 minutes longer.
In small batches, purΓ©e soup in blender. Return to pan and heat for 5 minutes.
Garnish with shredded carrots.
