Vegetarian Chili
Vegetarian Chili is an impressive dinner. Made with 2 cans black beans, drained and rinsed, 1 can tomatoes, diced (drain and reserve juice), 1 can corn, drained, 1 can kidney beans, drained and rinsed and 1 med. onion, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large skillet, saute garlic in olive oil and add the onions and peppers.
Cook for 2-3 minutes.
Add cumin, chili powder and add juice from the tomatoes.
Simmer over low heat.
