Vegetable Soup
Vegetable Soup is an moderately easy dinner. Made with 3 lb. beef, 6 c. cold water, 1 tsp. salt, 1/4 tsp. thyme and 6 peppercorns, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large kettle, combine beef, water, salt, thyme, peppercorns and bay leaves.
Simmer 3 hours or until meat is tender.
Remove beef, peppercorns and bay leaves.
Separate meat from bones. Return meat to soup.
Add vegetable mix and canned tomatoes. Cover.
Simmer until vegetables are tender, about 20 minutes.
