In large pot, bring 2-quarts water to a rapid boil.

Cut up broccoli and cauliflower into bite size pieces.

Place cauliflower and broccoli into rapidly boiling water for 4 minutes.

Drain in colander and let cool, then place in a large bowl and add 3 chopped green onions and 1 chopped tomato.

Pour Ranch dressing over vegetables, enough to coat mixture.

Chop the other tomato up and place on top of mixture for decoration.

Chill for 2 hours. Cut pita bread in half; fill pitas up with vegetable salad.

Top with shredded Cheddar cheese.

May be microwaved to melt cheese on top.
