Turkey Soup(Leftover Turkey)
Turkey Soup(Leftover Turkey) is an impressive dinner. Made with 1/2 stick butter, 1/2 c. chopped onion, 1/2 c. chopped or shredded carrots, 1/2 c. chopped celery and 1 c. green chopped pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt butter and saute onion, carrots and celery until celery and onion are limp and transparent.
Add chopped green peppers, apples, tomato juice, turkey stock, flour and water mixed, curry powder, nutmeg, whole cloves, salt and pepper. Simmer until all vegetables are done.
It can go for hours, but should simmer at least
1/2 to 2 hours on low simmer. Remove cloves and add cooked rice and turkey. Heat thoroughly. Makes 8 to 10 generous servings.
